Usage

Striking chukamen

With wheat flour in the mixer it makes chukamen dough. Without alkaline water there is no chukamen — the yellow colour and the springy bite both come from it.

Not the salt-maker's kansui

Two different liquids share a reading in Japanese. The salt maker's is concentrated seawater; the noodle maker's is alkaline water from wood ash. They are not interchangeable.
