Usage

Drawn out on the rack

A noodle rope goes on the stretching rack. The drawing out happens before it is hung; on the rack the strands simply dry in the sun — so it needs open sky above.

The same dough as udon

Somen and udon share the same dough and the same sheet. Cut into strands by the rolls it is udon; cut into a thick rope and drawn out by hand it is somen. Dried noodles are named by their thickness.
