A katsuo fillet simmered until the flesh firms up. Good as it is in simmered and dressed dishes, and dried it becomes katsuobushi.
Obtaining
Usage
Used as it is
It is already cooked through, so it can be sliced and eaten. It goes into simmered dishes, dressings and salads.
Dried, it becomes katsuobushi
Dry it hard on the rack and it becomes katsuobushi. Skip the simmering and you get ordinary dried fish, not this.

In the real world
Namaribushi is the katsuobushi process stopped after simmering. Sold as food in its own right; carried on through smoking and drying it becomes the hard block.
Differences in game
Satoyama has no boning or smoking step; the simmering stands for all of it.
