Yellow noodles cut from an alkaline dough sheet. Edible as they are, but they only become a meal once cooked.

Usage

Noodles are an ingredient

On their own the noodles barely fill you. They come into their own cooked with broth and toppings.

Okinawa soba uses these too

Okinawa soba's noodles are wheat flour struck with wood-ash lye — made exactly as chukamen is. What earns the name is the finished dish, not the noodle, so the noodle is not split out.
