Obtaining

Usage

Tofu, dried

With the water gone it stacks in the storehouse without the worry fresh tofu brings, waiting to be rehydrated for simmering.

Behavior

A longer cure than himono

It sits on the rack longer than dried fish — the time it takes to drive the water out of a whole block.

In the real world

Koya-dofu is tofu frozen and then dried for keeping. It is also called shimi-dofu or kori-dofu, and comes from cold regions such as Mount Koya, Tohoku and Shinshu.

Differences in game

Satoyama folds the freeze-then-dry winter cure into a single pass on the rack, so it does not require a cold climate.
